Papad an important part of South Asian cuisine, recipes vary from region to region and family to family, but typically it is made from lentil, chickpea, black gram or rice flour or Potato . In North India, the lentil variety is more popular and is usually called 'papad'. Salt and peanut oil are added to make a dough, which can be flavored with seasonings such as chili, cumin, garlic or black pepper. Sometimes baking soda is also added. The dough is shaped into a thin, round flat bread and then dried (traditionally in the sun) and can be cooked by deep-frying, roasting over an open flame, toasting, or microwave, depending on the desired texture. Papad are the most popular adjuncts in the Indian diet. About 95% of the production of papad in the country is prepared at household level or in cottage scale, by traditional method using rolling pin for rolling the dough. This is time consuming and laborious.
Jas Enterprises has developed a simple inexpensive foot operated press to make about 500 papad / hour from Dal flour dough. The thickness of the papad altered in the machine by adjusting the clearance between the roller & polpat. Being leg operated it is simple and easy to operate. This machine adopted for cottage scale production of papad. Raw materials required for papad making are locally available in rural areas. Urad dhal, any pulse flour, salt, farinaceous material and spice mix are required. The papad industry has a good scope for marketing. Papad are exported to 42 countries from India . The preparation of papad consists of dough making using pulse flour (preferably urad dhal), salt, carbonates, farinaceous material and water. The dough is knead made into Kinder Mixture and passed in to extruder. Then it will cut with luva cutting machine or manual. The pressed circular shaped papad is dry to 14-15% moisture level in sun light or in dryer. The above process can easily be dons at village level as it involves low investment.
